Cured Egg Yolk

Ingredients

  • 1 cup kosher salt

  • 3 cups sugar

  • 9 large egg yolks

Directions

1. Combine salt & sugar. 

2. Lay half the mixture on the bottom of a deep tupperware. 

3. Separate egg yolks from egg whites. Discard the whites(use for omelette or whatever).

3. Create grooves for the egg yolks to sit it. Place the egg yolks in.

4. Cover the yolks with the rest of the salt & sugar mixture. 

5. Close the top on the tupperware & store in the fridge for minimum 3 days. 

6. Wash the mixture off & enjoy

6. Enjoy with steaks, pasta, alcoholic drinks, or on its own to weird people out!

I'm Blue Daba Dee Daba Die

My dad's famous Blue Cheese Dressing! Great with salads or buffalo wings/cauliflower bites.

Instructions for 1kg chicken wings:

Salt & pepper the wings. Put in the oven at 425 for 35 mins

Or replace chicken with cauliflower bites and cook for 25 mins

 

Ingredients for blue cheese dressing:

125g Gorgonzola

1tsp tarragon 

5 tbs mayo or plain yogurt

Juice from Half an orange 

1/4 onion

Salt and pepper 

 

Instructions for dressing:

mash it all up (except the onion) with a fork or in a food processor, add the chopped onion and mix

 

Ingredients for sauce:

Half a bottle of Red Hot

 1/4 cup butter.

 

Instructions for Sauce:

In a saucepan, add Red Hot & butter. Reduce on medium heat till it thickens a bit. Toss wings in sauce.

Reduce all ingredients in a saucepan until it thickens nearly half way. Toss wings in sauce.

Squash it

Acorn Squash Soup

~hit em with the flava: curry kaffir lime/lemongrass infused coconut milk with Scotch glazed acorn seeds. Slam

Ingredients:

2 TBS curry

5 leaves kaffir lime

2 stalks lemongrass

1 can coconut milk

 

Ingredients for Glazed Acorn Seeds:

1 shot of sugar

Half a tbls of cardommum

1/4 tbs salt

1 shot of scotch for the chef and 1/2 shot in the recipe. 

 

Directions:

1. Preheat oven to 400F

2. Cut one squash in half & cut the top off the other squash 

3. Clean the seeds out of the acorns and put aside to dry. We'll be using them shortly

5. Brush canola or veggie oil on the acorns and onion

6. Sprinkle 2 TBS curry & 1 tsp salt/pepper

7. Put the acorns and onion in the oven at 400F for 35 mins

4. Steep 1 can coconut milk with 2 stalks of minced lemongrass and 5 leaves of dried kaffir lime leaves on low heat

5. Strain coconut milk from and lemongrass & kaffir lime leaves(can use with a sifter or cheese cloth).

6. Glaze acorn seeds by putting all the ingredients in a pan and cook for 5 minutes on low until sugar is desolved and the mixture is bubbly

7. Take the two halves of the acorn and onion out of the oven, put in blender with coconut milk and blend until smooth

8. Pour the soup into the whole roasted acorn, top with glazed acorn seeds a little olive oil

Ingredients:

154g ginger

1 clove garlic

Juice from one lime 

1/4 tsp chili flakes

2 tbsp soy sauce

1 cup canola oil

1tbsp sugar

 

Directions:

1. Blend all ingredients, except the oil to a liquid.

2. Add oil slowly and emulsify

 

Ingredients for Tempeh Bowl:

1 cup of jasmine rice

Half a handful of red pepper, cucumber, spinach, carrot, daikon, cilantro, green onion

Grilled tempeh

Here's the easiest lesson you can have....no measuring necessary. 

Directions:

1. Grind Weed up(how ever much you want). Don't grind it too too fine.

2. Bake in the oven at 240f 30 mins to activate the thc. This process is called “decarbing”. Don’t let the oven go over 265F or the thc will burn out aka you won’t get high! 

3. Place the weed in a very clean Masson jar(it’s gotta be clean cause you don’t want a bacterial build up to occur)

4. Take the 94% proof alcohol(you can use vodka, rum, brandy) and fill it just so it’s covering the amount of weed you have. 

5. Put it in the fridge for 3 weeks. If you’re impatient 2 weeks is alright but may not be as strong. 

6. After a couple weeks, strain out the bud, and enjoy! A tsp for a dose.

Salmon Matcha Melon

Pan seared salmon with cantaloupe and matcha cream

  Ingredients:   Salmon tail  1 tbsp cantaloupe(cut in cubes)  nori cut in a couple strips  1/4 tsp sesame seeds  1 tbsp oil  1 tbsp butter(optional)  Pinch of salt & pepper      Sauce:   2 tbsp cream  1/2 tsp matcha  pinch of salt      Directions:   1. Heat oil in pan.  2. Sear salmon on both sides till lightly golden.  3. Put butter in the pan and use a spoon to douce the salmon(optional).  4. Blend and heat up sauce on low heat(so the cream doesn't scorch)  5. Drizzle the salmon with the matcha sauce and top with the rest of the ingredients.      *Tip: Sear the top side of the salmon first, then flip on the skin side. Butter can leave a dark residue on the flesh.

Romanesco

Whole Roasted Romanesco

Servings: 4

Prep Time: 10 mins

Total Time: 50 mins

Ingredients:

Whole romanesco

1 tsp salt

1 tsp pepper

1 1/2 tbsp olive oil

Greek yogurt— 4 tbsp

Pomegranate glaze 2 tbs

Hand full of zaatar, feta, pomegranate & mint, pumpkin seeds,(about 4 tbs of each but do it to taste)

Squeeze some lemon at the end to taste!

Directions:

1. Drop a whole head of Romanesco into boiling water for 3 minutes. Remove the cauliflower and put on a baking sheet. From the top, cut open the Romanesco into quarters.

2. Season with olive oil, salt, & pepper. Roast at 425° F for 35-40 minutes

3. Once roasted, drizzle & sprinkle all ingredients onto the Romanesco

RIND OR DIE

Pickled Watermelon Rind

    Servings: 8 (makes 1 Liter)  Prep time: 10 mins  Total time: 40 mins     Ingredients:  1 pound watermelon rind (about half of a standard sized watermelon)  1/4 tsp salt  1/4 tsp peppecorn  1 cup cider vinegar  1 cup water  1 cup sugar  1/2 cup hibiscus  1 clove   3 mint leaves tablespoon mint  1 tablespoon lemon juice     Directions:  1. Peel the rind away from the skin with a peeler  2. Thoroughly clean Glass jar  3. Boil Cider Vinegar, water, lemon juice, sugar, salt, and mint  4. Put watermelon rinds, hibiscus, peppercorns in the jar  5. Once the liquid has reached a boil, remove the mint from the mixture and pour liquids into the jar  6. Let cool for 30 mins  7. Tightly seal the jar  8. Keep ingredients sealed for 1-3 weeks

    Servings: 16 servings (makes 1 Liter)  Prep time: 5 mins  Total time: 10 mins     Ingredients:   1 bunches beet top  1 tsp garlic  1/2 L parmesan 1 cups roasted walnuts   1 cups olive oil  1 tsp salt     Directions:  1. Preheat oven to 500F  2. Roast walnuts 5mins at 500F  3. In a blender or food processor, combine 2 bunches beet tops, 2 cups olive oil, 2 tsp salt, 2 tsp garlic, 1 L parmesan, 2 cups roasted walnuts

Broccoli Stem Soup

    Servings: 1 (half a liter of soup)  Prep time: 5-10 mins  Total time: 30 mins     Ingredients:  3 stalks broccoli  1 small onion  1 clove garlic  1 cup water or Vegetable stalk  1 cup cream  1 tbs butter  1 tablespoon olive oil  zest of 1 lemon     Directions:  1. Preheat oven to 400F  2. Boil water  3. Peel and cut broccoli stems in 1/2 inch cubes (or 1 inch), cut onion in half  4. Blanch stems in water for 1 minute   5. Strain the stems out of the water   6. Toss the steams, garlic, and onion with olive oil and salt & pepper to taste  7. Roast stems, garlic, onion in the oven for 20-25 mins (should be able to stick a knife smoothly through the stem)  8. Blend all ingredients      Optional Garnish: sweet Chipotle roasted almonds  Ingredients: 5 almonds, 1/2 tsp chipotle puree, 1 tsp sugar  Directions: toss together, put in the oven at 450F for 5 minutes
