Whole Roasted Romanesco

Total Time: 50 mins
1 tsp salt
1 tsp pepper
1 1/2 tbsp olive oil
Greek yogurt— 4 tbsp
Pomegranate glaze 2 tbs
Hand full of zaatar, feta, pomegranate & mint, pumpkin seeds,(about 4 tbs of each but do it to taste)
Squeeze some lemon at the end to taste!
1. Drop a whole head of Romanesco into boiling water for 3 minutes. Remove the cauliflower and put on a baking sheet. From the top, cut open the Romanesco into quarters.
2. Season with olive oil, salt, & pepper. Roast at 425° F for 35-40 minutes
3. Once roasted, drizzle & sprinkle all ingredients onto the Romanesco
