April 18, 2018 Salmon Matcha Melon April 18, 2018/ Misschef Pan seared salmon with cantaloupe and matcha cream Ingredients:Salmon tail1 tbsp cantaloupe(cut in cubes)nori cut in a couple strips1/4 tsp sesame seeds1 tbsp oil1 tbsp butter(optional)Pinch of salt & pepper Sauce:2 tbsp cream1/2 tsp matchapinch of salt Directions:1. Heat oil in pan.2. Sear salmon on both sides till lightly golden.3. Put butter in the pan and use a spoon to douce the salmon(optional).4. Blend and heat up sauce on low heat(so the cream doesn't scorch)5. Drizzle the salmon with the matcha sauce and top with the rest of the ingredients. *Tip: Sear the top side of the salmon first, then flip on the skin side. Butter can leave a dark residue on the flesh.
